I grilled some bland fish and had nothing to put on it but pickles and mayo, so this is what I discovered:
One tablespoon real mayo with 2-1/2 spears of good quality kosher dill pickles makes plenty of really good tartar sauce for two (at only around 60 calories per serving). Chop the pickles up fine -- don't food process. It tastes better than regular tartar sauce, and it's like one fourth the calories or less.

Tartar sauce does not need to be exceedingly rich to taste good with fish, and I'm one of those people who views seafood as an excuse to consume tartar sauce. I just love the stuff. :)
Now, if only more restaurants would use less mayo in their own tartar sauce, I'd be a lot happier.
