Help-Ben Franklin quote re prejudice

A few months a go I found a good quote about prejudice that is supposed to be from Ben Franklin, but I cannot recall where I got it from and after a lot of searching (google, yahoo, and ask Jeeves), I cannot find it again to confirm it.

This is it:

"It is sufficiently known to all the thinking Part of Mankind, how difficult it is to alter Opinions long and universally receiv'd. The Prejudices of Education, Custom, and Example, are generally very strong.... It were, however, much to be wish'd, that Men would consider how glorious a Conquest they make, when they shake off all manner of Prejudice, and bring themselves to think freely, fairly, and honestly."

I hope someone will recognize it and tell me where I can find it. I would love to learn what the rest of the second sentence actually says.
