The Italian man who brought the Italian Indian in under his wing. . . my fiance's mother and sisters make their own cheese - as do he and his brothers. Their recipes and tradition has been handed down for hundreds and hundreds of years. My fiance makes all of our sausages. He and some other immigrant friends from Calabria get 4 pigs each year and went in together on a smoke house (built it) to dry it out. I'm learning how to do the eggplant (marinaded) and peppers, and hot pepper 'sauce' from his dad when I'm over there next week.
I wonder if the Italian man is talking about no one wants to 'make it' anymore for mass production/export?

If you've never tried imported Parmesan, you're in for a treat. A far cry from the dust which comes out of the green tubes in American supermarkets.
