I think the best argument is that they are being paranoid and need to chill as usual. "Happy Holidays" came about, for better or worse, in the commercialization of this whole season: Thanksgiving, Christmas and New Years. And it literally means "Holy Days."

To say "Merry Christmas" when it isn't December 25th is like saying "Happy Birthday" to people at any time other than their birthday.
