The only vegan I've ever known who was not inclined to lecture people on the merits of veganism was a co-worker a couple of years ago. Once day, since we often shared the lunchroom due to our schedules I asked her why she was not like the 50 other vegans we worked with. she said, "Mulsh when I ate meat my favorite meat was...headcheese." and " When I go home to the farm in Maine I still have to help my dad make it sometimes."
The first job I landed after being a cook for 6 years was as a lab aid at the county Coroner's office. As a cook I had finally developed a taste for liver and onions. All through my first week at the Coroner's lab I was looking foreword to cooking myself a nice liver and onion dinner. I planned to do this over the week end.
The first regular task I was assigned as a lab aid was preparing the human liver samples for drug and alcohol screens, a test that was performed over the weekend since it took about 48 hours to complete. Also bare in mind that a healthy human liver is remarkably similiar in color and texture to a healthy cow's liver. That first weekend I found some really nice beef liver, took it home and cooked it. As I cooked it I kept thinking about the human livers from the previous day. As I took my first bite I knew that I'd never eat or cook liver & onions again. I ended up throwing the whole thing out and going to a chinese restaurant that night.
