26. the secret to good mashed potatoes...
...is to simmer them, not boil. When you boil potatoes, the outer part sheds off in a watery layer that will make your tatoes watery.

THEN, after you drain them, put the pan back on the burner for a moment to dry up all excess water.

NOW you can mash them.

I use butter, sour cream, half & half, and for eating with beef, some horseradish. Delicious.
