Most pasta recipes are just flour and water and a lot of elbow work.

You can replace eggs in gnocchi with anything that will work as a binding agent. Vegan mayo supposedly works well. The potato will probably hold it together, just not as well...you'd just need to add water little by little until the consistency is correct. (dry but doughy.)

Edit: I disagree with the recipe above in only one area...I like my pasta water to have the salinity of seawater (1tbsp. salt to 1L water) It makes the pasta taste better, cook faster and hold together better.
