1. Not real hard...
...any cheap steak will do. Slightly freeze the steak and then slice as thinly as possible. Dice a bell pepper and an onion. If you have a broiler or toaster oven pre-heat it. Your choice of cheese is wide open. Heat maybe 1 1/2 tablespoons of oil in a skillet (with a cover if no broiler is available) to medium and add onion and pepper and saute about three minutes. Meanwhile if you have a broiler you can split and butter your rolls and sprinkle with garlic powder and toast them as a nice extra touch.Add your beef and stir fry with the vegetables until just no longer pink. At this point you can either pile the filling in the rolls and top with cheese and broil till melted OR shape the filling in the pan to about the size of your rolls and top with cheese and cover till melted and then fill your rolls....
