I've been to New Brunswick, Nova Scotia and Prince Edward Island. PEI was by far my favorite, red sand beaches, no congestion and only three constables for the entire province (at least when I was there).
I currently have a student from Quebec who might be able to answer some questions about the province for you if you are interested.
