Just brown the onion a bit then throw in the peppers and mushrooms, then zucs and tomatoes. Throw a lot of garlic in and salt and pepper. Cover it and let it stew on low or even throw it in the oven for a while. It will taste even better tomorrow. Like Ratatoille without the eggplant
