Slice peppers into strips. Toss in a bowl w/olive oil, S&P and finely chopped garlic (I use a garlic press for this). Let marinate for 10-15 minutes. Pre-heat oven to 350. Spread peppers on a foil-covered baking sheet (don't skip the foil or you will have a massive cleaning job on your hands!) and roast them until their edges start to brown.
You can also roast mushrooms and onions in a similar way and zucchini/tomatoes too (easier if you do halves instead of slices w/zux and toms, so they don't get too mushy. :hi:
