Fans of Good Eats / Alton Brown

So, what was your favorite episode/recipe/technique/joke?

I owe the world's best chocolate chip cookies to Alton (gluten = chewey!). I use Kosher salt now (wow - what a simple way to make everything better!). I can't live without my probe thermometer. And those fried plantaines? Better than french fries.

5. nope. they're not "french" fried. Just fried
They're AWESOME. And easy.

peel and cut into 1in thick medalions. Fry in oil 2 minutes per side, until golden. Remove, place on flat surface, squish down to about half, drop into a bath containign water, kosher salt, sliced garlic. Marinate for 5 minutes, pat dry, return to oil, fry until GBD.

They're SOOOOO good. It's like they're battered, but they're not.

2. Too many good/favorite episodes...
He's a lot of fun...and I like his scientific explanations.

I finally learned how to make an omelette from him. It's easy -- but I used to end up with scrambled eggs all the time.

I too always wound up with scrabled eggs (not that there's anything wrong with that- but that's another show)

Very technically-oriented. Not long on recipes. I ordered my signed copy from the food network, only to find out that Alton was coming to town the next week. I could have had a personally signed copy, instead of just a signed copy. Oh well. :dunce:

4. Alton made a salmon smoker
out of a cardboard box and the heating element from the hot plate in his hotel room. :D

That has to be my favorite. A close second would be the home brewed beer episode.

9. The homebrew episode was great
I espeically liked his comment about hops being related to cannibis.

But one thing bothered me. When he was picking out water he did say to not get distilled water, but he didn't say why (the yeast need some nutrients that are in normal water).

My dad taught me how to smoke salmon when I was a little girl, and I thought, Alton, that's the most creative method I've ever seen! :thumbsup:

7. Roasting prime rib under a flower pot.
He showed that if you don't have a convection oven to properly prepare a rib roast, all you need is a large terra cotta flowerpot. Put the roast on the bottom dish, then cover it with the flowerpot.

You can just feed the meat thermometer right through the drainage hole in the bottom (now the top) of the pot.

Alton rocks Emeril's lame ass, every time.

8. i learned how to make a perfectly cooked steak.
using an iron skillet, kosher salt, oil and the oven. yummy. dark and caramilized on the outside and pink on the inside. unfortunately i can't do this in summer since the oven has to be on 500 and here in se texas that is just not a good idea. hell it is 94 now with a 100 heat index. blech.

11. there's an episode where he grills right on the coals
blow the ash off with a hair dryer, then put the meat on. No flames because no oxygen.

12. interesting show, but....
WAY too anal for my liking. I like how he gets down to the science of cooking,and the fact that he has a major fetish for exotic kitchen gadgets. Not to mention he's a big-time Lib. But does it really take five days to make eggplant parmigana?

17. Turkey Brining.
I actually bought that episode and what a huge difference it makes. I love his show. My 9 year old watched it with me, nice 1 thing per episode.
