Brat enthusiasts bicker about the boil or not to boil or even when to boil debate

i have had them either way fat and happy, but the best recipe I got at a Lambeau field tailgate party. this won a contest or something

1. fresh brats from sheyboygan, wis (right Archae?)
2. soak them in ice cold water 10-30 minutes
3. grill them over indirect heat, brown 'em,but dont let them split and sizzle
4. then place them in a pot with beer, butter,onions,pepper, green pepper. people bicker about the beer, but i say it dont matter.some feel dark beer, some say cheap beer.the butter is the key ingrediant one tablespoon per sausage, or more
5. simmer them for 20 mins or so
6. some folks put them back on the grill for a minute
7. some folks eat them out of the pot
8. brat purists INSIST on fresh bakery rolls, none of them pre-split jobs. I tend to agree.
9. mustard of course, never catsup,milwaukee cheeseheads use barbeque sauce.

I love me some brats, and beer:)

9. Never! Boil! Meat!
Sure, boiling is fine if you're just defrosting to prepare the meat for the grill, oven, fryer, or skillet. Aside from that, boiled meat is nasty, tasteless and unimaginative.

12. technically, its a "simmer"
and have you ever had "potte de feu"? or soup?
Of course you can boil meat, I do it all the time as a stage in a recipe.

10. The Bratwurst & Beer Debate is international
It is slightly different here: the practice here is whatever or not to shower the Würste with beer while they're on the grill.

Aside from that it's pretty much the same - but Ketchup is definitely considered OK, usually a spiced (Curry) type.

bratwurst debate on a Packer webboard. tempers were really flaring!
catsup or not
gas or charcoal
boil or not
dark beer or light
it went on for 200 posts!

what the hell, its fun

(but nobody south of Chicago puts ketchup on a brat, nyaaah :)..)

And while the Sausage used is not a Brat, you should try a good Currywurst. Not that I'd say 'no' to a good mustard though.

19. This is the correct method of cooking Sheboygan brats.
My only nit to pick is that true brat-loving Milwaukeeans ONLY put BBQ sauce on their brats at Brewers games...

and there, it's called "Secret Stadium Sauce," NEVER "barbecue."

My brother used to work the swing shift at HD, one night after "nickle beer night" at Smitty's corner tavern, him a bunch of guys snuck into the old county stadium. It was Sept. on the Brewers were on a road trip and in next to last place. Well they were on a mission to get the secret recipe of the brat sauce, until a guard found them. So they over powered him, tied him up, and farted in his face until he gave up the recipe. It was a big fiasco and in all the papers.....but I know the ingrediants to the sauce now

25. I'm sorry but...the best brats are German brats...
IMO anyway...

The kind of brats that come from Wisconsin just don't cut it for me. Unfortunately I can't get real German brats where I live. I yet to find anywhere in America that sells the kind I live from Germany either.
