We made some last weekend with the Hollandaise sauce recipe in the South Beach book. That was really good.

It's not that hard, actually --

Boil for three minutes (no more!), then sautee in olive oil until it's got a nice gold color to it; finish with salt, pepper and, if you're really feeling festive, either bleu cheese or prosciutto.

OR

Shake raw asparagus in a zip-lock bag with olive oil, salt and pepper. Grill for 2-3 minutes a side, or roast in a 425 oven for about 8-10 minutes, turning once.
