Unless I add mayo, relish, salt and pepper and slap it between some bread. I never understood how people could eat easter eggs strait-up with salt. Hard, dry yokes are nauseating.

I buy a jar of pickled beets and save the brine. Peel some eggs and pop them in the jar for about a week. If I need to add some more liquid, about 1/2 water to between 1/8-1/4 cup white vinegar. Now that's hillbilly! :9

16. Mr. McD's pickled egg recipe
Grrrrrrate 36 hard boiled eggs 2 2/3 cups white vinegar 1 1/3 cups water 1 tablespoon salt 4 bay leaf large sprig fresh tarragon 1 bulb garlic 5 dry red peppers 1. Peel garlic and slice larger cloves into smaller pieces 2. Assemble eggs and spices in a suitable jar (about 3 Qt). 3. Mix the vinegar and water and fill the jar. 4. Allow at least a week before eating.
