Strawberries Are In Season!

A tribute to my favorite fruit.

Have some in my garden (Tristar Variety which bears throughout the summer) and picked the first couple of handfuls. Weather has been kind to them (rainy spring with sun last few weeks).

Strawberry Smoothie:

1 cup strawberry
1/2 banana
1 cup plain yogurt
2T honey (or to taste)
2 T. water or enough to help blend/improve consistency.

Blend ingredients. You can substitute silken tofu for the yogurt.

Chocolate Covered Strawberries

Wash and completely dry strawberry.

Melt chocolate chips in microwave by heating for 15 second intervals and stirring. Stop as soon as chocolate melts or it will burn.

Dip in strawberries by holding stems then place on wax paper.

Chill in refridgerator for at least 1/2.

Best when made a day in advance.

1. mmm...strawberries.

I like to freeze them and put them in the blender with silken tofu, vanilla soy milk, strawberry banana yogurt and sometimes a bit of chocolate syrup. blend for a yummy breakfast shake.

you can also do the same with other frozen fruits. my favorite is frozen bananas with pineapple yogurt and coconut. you can get really creative. raspberry and chocolate is also really good.

I just spooned lemon yogurt over a bowl of berries this morning. They were so deliciious that I ate them all up.

I'm enjoying one right now. I'll have to go down to the U-Pick place and pick up a bushel. Strawberries have ALWAYS been my favorite!!!!
