3. We are talkin' Shreveport, Louisiana here.
Mama used to make that, too. Come to think of it, except for shrimp creole (which she learned to make from her Cajun roommate) Mama wasn't that great a cook.

29. No, I don't know the place.
As I said somewhere else, mother used to chicken-fry steaks once or twice a week. My pop thought they were food. I mean thought they were good. anyway.

I grew up on a cow farm and pop did his own butchering. We et what was too old and stringy to sell. Pop could make "round steak" out of pretty near any cut of the cow. Mother developed pretty good biceps pounding that stuff enough to make it tender enough to fry. I reckon that accounts for my negative opinion of chicken-fried steak.

I'll have you know that Caddo Parish, Louisiana, is the capital of the Native American province of Texas.

"Texas" is a corruption of a Caddo Indian word meaning "Friendly" or "Allied" country. It was the territory of the Caddo-led confederation against the nomadic Comanche and Kiowa raiders. And the capital was about 5 miles from my childhood home, spang in Caddo Parish, La.

See, I'm a traditionalist. Never mind what them newfangled Spanish and Messican and Texas Revolutionary trouble-makers may have done with Texas -- I believe in the original Texas -- and northwest Louisiana is part of it. So there.

12. I can't live without shrimp poboys and boiled crawfish.
I go to New Orleans about 5-7 times a year, and the first meal I want is a shrimp poboy.

If crawfish are in season, I also need to get my fix of boiled crawfish.

Or, how about fresh fried oysters with a nice sauce and a margarita.

24. That would be file gumbo.
File powder is, I believe, derived from Sassafras root -- a sweet root -- as is Sarsparilla, like the good cowboy often ordered.

35. You can't get real Cajun food in a restaurant
Even in Louisiana, Cajun restaurants rarely have genuine Cajun cooking. If you want the real deal, you've got to sit at the table in a Cajun's home. Some of the relatively simple dishes are the best. Chicken and sausage gumbo is one of the most incredible foods on the planet. Smothered chicken, or a well-seasoned pork roast, are absolutely to die for... but if you order them in a restaurant, don't get your hopes up.

FYI: to the non-Louisiana DUers. blackened food is not Cajun. Yes, it was invented by a Cajun, but no one deliberately blackened food before Prudhomme came along. If a Mexican chef had thought of it, we'd be calling it Mexican food.
