Remember Pontius Pilate was of the Equestrian Class (The class between the Patrician and Proletarian Classes of Roman Society). The Equestrian Class is often called Roma's "Middle Class" but that is not quite right, it had its rich and poor people in it. It was a group of closely related people who tended to control the running of Business (and Government) of the Roman World.
One of the duties of the Equestrian Class was to command any and all Auxiliary forces in the Roman Army (i.e. NON-Roman Troops in the service of Rome). During the Roman Republic tax collection from non-Romans was given to the Equestrians and under Augustus Caesar these "Procurators" started to become rulers of Roman Provinces where no ROMAN troop were maintained.
Thus Pontius Pilate as a Equestrian Procurator of the Roman Provence of Judea had NO ROMAN TROOPS UNDER HIS COMMAND. We also know from Josephus that when Pontius Pilate first became Procurator he tried to exchange troops from Caeserea (on the Coast of Judea) with troops stationed in Jerusalem. This caused a protest/riot for the troops on the coast treated their standards as "gods" while the Troops in Jerusalem did not view their standards as "gods" (Pilate reversed the Order upon seeing the protest and kept the troops as they were). This imply the troops on the Coast were Greeks in Roman Service, while the Troops in Jerusalem were Jews in Roman Service.
What this means is the Troops Pontius Pilate had available to him at the time of Christ's execution were probably Jewish in background (through under Roman p Pay and maybe even Roman Equestrian Command). This does not completely exclude the Greeks, while the Cohorts in Jerusalem may have been Jewish, it is possible that a small ban (A Company or smaller unit) of Greeks may have been in Jerusalem to protect Pontius Pilate AND to do may real dirty work he wanted done (such as carry out executions and Punishments).
Thus it is doubtful that the "Roman Guards" spoke Latin, but will the paper be in Greek or Aramaic (The language spoken by the Jews of the Time of Christ)?
