Zuchinni experts HELP!!
I am drowning in the stuff. Who knew it would be so prolific? Who knew?

looking for recipe ideas and creative solutions for disposal/distribution.

2 plants are heavy producers, with 3 more about to come online. WHAT WAS I THINKING!!!! Then there is the sunburst zuchinni which are small, yellow and cute, they will arrive later.

1. zuchinni Bread
yum



3 Tblsp. oil
1 cup sugar
1/2 cup peeled, grated apple 4 beaten egg whites
1 cup grated zucchini
1 1/2 cups flour
1 1/2 tsp. cinnamon
3/4 tsp. baking soda
1/4 tsp. baking powder
1/3 cup chopped nuts, optional

Blend first 3 ingredients. Beat eggs into mixture. Place zucchini in separate bowl; fold beaten egg mixture into zucchini. Stir dry ingredients; add to zucchini mixture. Mix well. Pour batter into greased 8 - by - 4 inch loaf pan. Bake at 325 degrees for approximately 1 hour or until tester comes out clean.

4. thanks for the recipe
that is the plan for tonight. I was waiting for a call back from a friend who makes a mean chocolate zuc loaf. Think I will just add the chips to your recipe.

My mom makes it all the time and it is pretty damn tastey.
Grilled slices of zuchinni is really good too.

5. Zucchini crust pizza
Every one of your friends on a low carb diet will love you for this recipe-and you can get rid of surplus zucchini!

Shred zucchini-about 2 cups. Drain.
Add two cups shredded mozarella.
Add one egg
Add two tablespoons flour and pizza spices.

Mix together, then pat onto greased pizza sheet. Bake at 400 degrees until 'crust' is set.

Take out of oven, spread on pizza sauce and whatever else you want. Put back in oven and heat until toppings are hot.

This is really good, and has a lot less calories and carbs than conventional pizza, especially if you make your own pizza sauce.

8. Great simple recipe
Just slice them up along with some onion and peppers. Throw in a baking dish with some tomato sauce and a little tomato paste. Add black pepper to taste. Bake until done. Absolutely delicious.

9. Zuchinni Soups and Breads can be frozen and enjoyed all winter!

Wonderful treat. And both make wonderful gifts for friends and relatives too.

Don't have a ready recipe for the soup, but maybe someone else does.
A good vegetarian cookbook like Moosewood would likely have some nice ideas for you too.

10. Stir-fried Zucchini
Slice and quarter the zucchini then stir fry with soy sauce and extra-virgin olive oil. It's a quick and yummy side dish or healthy snack.

(also zucchini bread as posted above - my recipe is pretty much the same, except I ALSO ADD a teaspoon of VANILLA).

11. Just started making them this way this year....and love it!
Cube the zucchini, cut up some onions, garlic, peppers. If you want, you can also cut up some eggplant. You can also add some corn if you choose and maybe a small can of mushrooms if the spirit moves you.

Brown it all up, throw in some medium salsa, get it cooking good, then put in on half of a nice warm flour tortilla. Put some shredded cheddar cheese on top, fold over the tortilla and put it in the toaster oven for a few minutes to get the cheese melted and the tortilla lightly crisp.

YUMMMMMMMMM! ( I used to make a nice zucchini/onion tomato sauce over pasta, since I'm Italian.......but this one has become my favorite!)

12. favorite summertime zuchinni recipe
cut the stem end off and then cut lengthwise. Scoop out middle of zuchinnin leaving about 1/4 inch on the inside of the skin. Chop scooped out zuchinni, red pepper, garlic cloves, red onions, black olives and mix in bowl with olive oil and red wine vinegar and parmesan cheese. Fill hollowed out zuchinni with mixture, place on grill (or in oven) and cook for 10 minutes. Top with shredded mozzarella and cook until cheese is bubbly and brown.

vacumn seal it, and freeze for many loaves of bread o'er the winter.

With 5 kids at home, 3 plants will do us.

You'll just have a 20-pound pleco problem.

16. easy recipe
I slice the zuchs in that method where you turn it as you cut so all the pieces are the same smallish size.

Put in skillet with butter, sprinkle with Chef Hans'Louisiana Cajun Poultry Seasoning. Cook until done. Yum!
