Stewed Pork... you want the recipe? In a sandwich it's great with a slab of Sao Jorge Cheese and a stack of pickled hot pepper slices... MMMMMMMM!!!

9. Mkay.... get your pencils ready
Cacoila (Serves 10 people for 1 day or 1 person for 10 days)

Ingredients -

5 pounds pork blade meat (ask your butcher, it's from the shoulder... Can also use pork butt) cut into two inch chunks or cubes.

water

Kosher salt

Bay leaves

Ground Paprika

Hot Chopped peppers

Red Wine Vinegar

four tablespoonds of chopped Garlic

Getting the pork ready

Put the trimmed pork chunks in a 5 gallon bucket

Add quarter cup kosher salt

Add handful of bay leaves

Add quarter cup ground paprika

Add garlic

Add about two cups red wine vinegar

Add water until just above the top of the pork

Stir vigorously until the marinade is pungent and covers all the pork

Cover bucket and put in fridge for 24 hours

Cooking

use tongs to remove the cacoila and place it in a deep pot. Put the heat low and cover. Leave it on the stove for several hours stirring occasonally. When the pork is falling apart under light pressure from a wooden spoon, it's ready to eat. ( I usually cook it in about 2 pound servings since I usually eat it alone. )

Good ways to eat cacoila

Goes great over a heap of boiled new potatoes

Goes great over yellow rice with olives

Goes great stuffed into a crusty Portuguese roll with a slab of Sao Jorge Cheese and a few slices of pickled hot red peppers with a side of thickly cut fried potato slices

Serve with a nice tall glass of Vinho Tinto or a cold bottle of Sagres beer.

12. Absolutely I do - Cookingis my #1 hobby. The only hobby I have that I
never would want to do for a living cause I wouldn't like it as much.

Mainly I cook asian food but I love it all. I have aspiritual belief that all cultures meet at their foods. Its the place people can truly relate. There's no better way to show someon that you are with them than to share food with them.

Give me all you got!

As per the Cacoila, I'll try it next weekend, after payday! Thanks again, man. This is great! Sounds scrumptious. I have just begun expirimenting with brining meat!

19. I love Cuban sandwiches! Used to practically live on them in summer.

Also bollitos! (I'm originally from Tampa.)

I also adore a fried shrimp po' boy sandwich and the best ones I ever had were not in New Orleans but in Bayou le Batre, Alabama, on Mobile Bay.
