5. This is what I use.
1/3 cups all-purpose flour

1/3 cup of butter.

3 cups chicken broth, defatted

2 skinless, boneless chicken breast halves (8 oz. total), diced

1 (10 oz.) package frozen cut okra, thawed

1/2 cup chopped onions

1/3 cup chopped celery

4 cloves garlic, minced

1/4 teaspoon ground black pepper

1/4 teaspoon ground red pepper

2 bay leaves

2 cups hot cooked rice (optional)


Melt the butter in a deep deep pot. Put in the flour and stir until it becomes a dark roux.

Stir in the vegetables.

Stir in the the chicken stock or broth.

Add the garlic and pepper and bay leaves.

Add the diced cooked chicken (which I usually have already cooked to make the stock).

Simmer for about an hour.

I like to steam the rice separetely and at it at the end, but you can add uncooked rice and simmer till it's cooked.
