Anyway to cook cornish hen, that doesn't require grilling?

That's the way I cook them.

2. Rinse it

set the oven to 350. Pat it dry. Now pour vegetable oil or olive oil on it (all of it, even the inside if there is a body cavity). Then sprinkle garlic salt on it, liberally (of course!).

Bake at 350 for one hour per pound. Baste with juices often.

Mmmm. Your whole house will smell like garlicky chicken!!!

3. I roast 'em....

I like a rice and pine nut stuffing, and rub the outside with any number of different seasoning mixes. Try a flavorful jerk rub if you like them zingy.
