Aha! I knew our country wasn't colorblind!
CONCORD, N.H. - Despite years of public service campaigns — and lectures from Mom — Americans still aren't eating even close to enough fruits and vegetables, according to a recent study.

The survey also suggests that blueberry and eggplant growers might want to do some public relations work.

Asked which color produce they eat in a typical day, only 18 percent said blue and purple; 85 percent said green; and 79 percent said yellow and orange.



Why are Americans so prejudiced against blue and purple produce?

(Of course I love blueberries, plums, and blackberries...HATE EGGPLANT!)

1. I recently discovered
I like eggplant. I'm not sure why I disliked it before, or if I ever even really had it. Point is, I like it now!

2. I keep giving Eggplant a shot (I never cook it myself mind you), but..
...it lets me down everytime.

See what you think. This is what turned me.

Mix Balsamic Vinegar and Olive Oil 3 to 1 in a large plastic bag with soy sauce, worcestershire sauce, and anything else you like.

Cut eggplant in 1/2 - 1 inch slices.

Soak in the bag for about 20 minutes.

Grill over fire for about 5 minutes per side. (that's the part that makes it goooooood)

3. I recently read that the 3 most-eaten vegetables in the US are:
Iceberg lettuce
French fries
Potato chips (I didn't know that counted as a vegetable).

It's an even sadder list than I expected. It was in an article in National Geographic about obesity in this country.

4. That's pretty sad all around.
Iceberg lettuce is one of the most empty vegatables there is.

French fries (are we allowed to call them that anymore) just can't be healthy, although potatoes are good in other ways (not chips).
