Favorite Cookie recipes thread!
My favorite is the recipe for "Wookie Cookies" from the Star Wars Cookbook. Here it is:

Ingredients:
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1 cup unsalted butter at room temp.
i cup packed brown sugar
1/2 cup granulated sugar
2 large eggs
1 1/2 teaspoons vanilla extract
1 cup milk chocolate chips
1 cup semi-sweet chocolate chips

1.Preheat oven to 375*F
2.Put the flour, baking soda, salt, and cinnamon in a mixing bowl. Stir with a wooden spoon until well mixed. Set aside.
3.Put the butter, brown sugar, and granulated sugar in another mixing bowl. Using an electric mixer set on high speed, beat together until well blended and creamy (about 3 mins). Beat in the eggs and vanilla extract. Add the flour mixture and stir until blended. Stir in chocolate chips/
4.Scoop up rounded tablespoon of the dough and drop into baking sheet. Repeat until you have used up all the dough. Leave about 1 inch between cookies.
5. Put baking sheets in oven. Bake until golden brown, about 10 minutes.
6. Take out cookies, let cool on cooling rack.

Makes about 3 dozen cookies.

1. Chocolate Chip Mint Cookies
Not sure where I first found this recipe.

Chocolate Chip Mint Cookies

1 1/2 sticks unsalted butter
1/3 cup brown sugar
1/3 cup sugar
1 egg
1 teaspoon vanilla
1 teaspoon peppermint extract
1 1/2 cup flour
1/4 cup unsweetened cocoa
1 teaspoon baking soda
1 cup chocolate chips

Preheat oven to 350 and grease cookie sheets. Cream butter and sugars. Beat in egg, vanilla, and peppermint extracts. Add dry ingredients gradually along with the chocolate chips. Drop by rounded teaspoons onto greased cookie sheet and bake 10 minutes. Makes about 3 1/2 dozen.
