BEHOLD! I have grafted this cromulent omelet to my gullet!

3 eggs, beaten and omeletized in a pan, to which some sharp cheddar and chopped onion is added.

Then some reheated leftover black beans and rice with chorizo is piled on, and some sour cream and guacamole smeared over it, then some reheated leftover quesadilla chicken meat is sprinkled on top, and then some more cheddar, and then the whole thing is folded over until the innards squoosh out the open end, and it all comes together on the plate into a heaping conglomeration of spicy yet magnificent gastronomic satisfaction.

dolo_amber says it's gross, because it has eggs AND chicken in it. I say she's touched in the haid. And of course I'm right, 'cause she's ALWAYS doing it wrong.

By law, anything with chorizo is delicious. You'll have heartburn later, but it will be worth it.
