RIBS!
I smoked some ribs earlier. Just took em off a little while ago. MY GOD THEY ROCK! Easily the best I've ever done!

5. Do you foil them? Some people do a 3-2-1
3 hours out of foil, 2 in foil, 1 out of foil. Supposed to get 'em tender.

What kind of pit do you use to smoke 'em? I have a Weber Smokey Mountain (bullet style water smoker)

6. Got a Weber kettle
Smoke using a drip pan with beer, and coals on either side of the pan. Ribs over the pan so they only get reflected heat. A true smoker would be better, but this batch was still damn good, so I ain't complaining...

The beauty of that weber smoker is you can fill it with charcoal and run it for 18 hours practically unattended...!

www.virtualweberbullet.com is a site DEVOTED to the Weber Smoker. Check it out if yer interested, but beware---after I stumbled on it, I ended up buying one. (I love it tho!)
