Actually I'm going to the store to get some fresh asparagus. One of my favorite short-on-time meals now is penne with roasted asparagus in a balsamic butter sauce. Takes about twenty minutes to make, and is extremely tasty. :D

10. OK
You need:

1/2 pound asparagus
5 tbsp balsamic vinegar
3 tbsp butter
2 cups penne (around half a pound)
1 tbsp olive oil
1 pinch brown sugar (optional)
Serves 2

Heat the oven to 400 degrees. If you're going for speed, also start the pasta water at this time. Meanwhile, break off the tough ends of the asparagus and chop the rest into one-inch pieces. Toss with the oil and some salt and pepper on a baking sheet, and put it in the oven for ten minutes. While the asparagus is roasting, put the balsamic vinegar in a saucepan and simmer until around 1 and 1/2 tbsp remain. Take it off the heat and add the butter and sugar, and a little pepper. Once the pasta is done (10-13 minutes), toss it with the sauce and the asparagus, add some grated parmesan or goat cheese and serve.

8. Try baking it instead!
Break asparagus into short pieces, toss with a little olive oil, salt and pepper.

Spray some cooking spray in a baking pan and spread the asparagus pieces evenly on it.

Bake 20 minutes at 400 degrees.

Toss with spaghetti, grated parmesan cheese, and a bit more olive oil,


Baking asparagus brings out complex flavors. This recipe is healthy if you use low-fat parmesan.

But I gotta admit the garlic and butter you're using sound yummy too.

Absolutely love it, ma'am...Especially sauteed in butter and garlic! I could eat it every day....

Only drawback is it makes my pee smell funny...
