Is mex food worth the effort?

I just had beef stew but I am still hungry, I am also trying to lose weight. Sorry for the copycat.

It is similar to Mexican food, the way particle board is similar to hardwood.

Not to put too fine a point on it, but each region of Mexico has its own dishes, as different from each other as Vietnamese cooking is from Lebanese. What's shown in the picture is a yupified Tex-Mex version of a north-eastern Mexican dish. :shrug:

12. Some of My Favorite Mexican Dishes
From different regions:

Cabrito al Pastor (whole baby goat charcoal roasted on a spit)

Enchiladas Verdes (chicken green enchiladas with heavy cream)

Jaivas rellenas a la Tampiqueña (Stuffed blue crabs, Tampico style)

Menudo (beef tripe soup in red chilli broth)

Pipian (similar to mole but green. Very complex recipe)

Tamales Veracruzanos (Veracruz style pork tamales wrapped in banana leaves).

18. Oh man, please don't start talking about mexican food!
Carnes en su jugo (thin beef strips in their broth, with beans and bacon, usually served with onion, cilantro and guacamole, from Jalisco)
Tostadas de erizo (sea urchin stew on a flat, fried corn tortilla, usually served with olive oil and spicy guacamole, from Baja California)
Camaron aguachile (raw shrimp marinated in lemon juice, with onion and chile de arbol, usually served "as is", from Sinaloa)
Tacos de buche, cachete y cuerito (tacos of pig's stomach, cheek and soft rhinds, usually served with onion, cilantro and hot sauce, from Michoacán)
Tacos de chapulines con salsa verde (grasshopper tacos with green sauce, from Oaxaca)
Guisado de panza al guajillo (beef's stomach stew in guajillo chile, from Mexico State)
Borrego al chilmole (rotisserie lamb slathered in chilmole sauce, usually served with whole habanero chiles, from Yucatán)

And my father's favourite:
Costillitas de abulon (abalone ribs) :-)

The best food in the world. Really. Gosh.

10. it is a lot of work
but there is nothing likea fine chile verde. I cook chicano- cal/sonora style. But as I have gotten older it takes a while. Tomorrow, I have 3 ripe Haas avocados I will make guacamole. I cheated and bought frozen flautas at TJ's. and I have beans that I froze after cooking a big mess of, last week.I make guacamole like I make pico de gallo, picante.

YES !!!! But are you trying to lose weight on Mexican food ? Of course, we eat it down here all the time and I'm now a pretty cook, but I never it heard it was good for losing weight, except maybe like Shrimp Ranchero or Fish Veracruzana. You have to skip the lard, the creams. The grilled meat is great, tortillas are not low-fat, and frying food is well, frying food. The Tres Leches Cakes, homemade ice-creams, flan, cheese cakes, and oh my god the bread and pastries just make you drool. Frijoles and Frijoles Charros are very high calorie. Chiles Rellanos are stuffed with Oaxaca cheese down here, I could on and on. Lasst night, we had Chiles Nogadas covered with cream.


We eat alot of fish, infact, Mike just made some fish, salad, rice with salsa on the side and I have to go.

Talk to you later, it's a battle, I know, drink lots of water and walk alot, keep busy to keep your mind off of food.

16. We live
in San Antonio Del Mar, just north of Rosarito ! About 25 years ago, this was an American enclave, now it is mostly a Mexican neighborhood . We used to live in below Ensenada, but the commute was too long. You have to avoid the tourist places, and go straight to where the Mexicans are eating,
there are so many great places. Also, check out Frida's Fiestas by Guadalupe Rivera and Marie- Ellen Colle - many great recipes:

But it is best when eaten in Mexico, rather than at Taco Bell. When I was exactly your age, I visited Mexico with my Nana and my Dad. My Nana was spending the winter in Arizona and she had my Dad and me come visit her on Spring Break, as a graduation present. We visited many places, including the Grand Canyon, and went South into Mexico. I didn't enjoy it much, since the border towns, like Nogales, where we went, are tourist traps and my Dad was very irritable with people on the street constantly trying to sell him things. But I did love the food. I loved the enchiladas. We went to a wonderful restaurant where I discovered them. And then I made my Dad sick, the next morning, by having enchiladas and Sprite for breakfast. I had a much less sensitive stomach back then, LOL!:D

17. Okay, here is a lo-cal and good for you receipe:
Chicken in Tomatillo Sauce - You will need a deep skillet for this:

5-6 Chicken Breasts, bone in

3 pounds of tomatillos, peeled, sliced and chopped
1 large onion, chopped
3-4 serrano chiles, chopped
2 bunches cilanto, chopped
10-12 cloves of garlic, sliced
1 small can of pimientos, diced

olive oil, 1/4 cup

Peel and slice the tomatillos, onion, chiles, cilantro and 1/2 of the garlic. Place in bowl and set aside.

In large skillet, heat the olive oil and other 1/2 of the garlic. Cook the garlic about 4 minutes. Add the chicken breasts, cooking 7 minutes a side, ending up with the skin side up.

Spoon tomatillo mixture over the top, add the pimientos and juice, cover and simmer on low for 45 minutes.

Serve with rice and sour cream.

I use more garlic, if you add any more serranos, it will be hot.

It's very good, and that is your basic green sauce !

These are tomatillos, see the outside needs to peeled off, it's like a skin, then just slice the tomatillo and chop it up, like you would an onion:

Whether it's "Mexican," "Tex-Mex," "Central/South American," or just "Southwestern," it's my favorite of all choices.

Of course, the fact that I live in the southwest might have something to do with that! I don't know about the rest of the country, but I know that when I go north to Oregon to visit my mom, the places she takes me for "Mexican Food" are a weak imitation of the real thing.

On edit: you won't lose weight on rice, beans, sour cream, tortillas, etc.!

No, it's not that far, but on the BigJawnn Bicycle Diet Exchange Table, a Krispy Kreme don-nut costs 50 miles and an enchilada dinner is 100 miles.

Maybe I should forego this week's donut and work towards some Tex-Mex next week?
