I have leeks, fresh basil, and catfish that I need to use up today
Any recipe suggestions. I also have pasta, flour, and other basics in the kitchen. Thanks.

Yum! Simple and delish. Ooops. Forgot the braised leeks. Clean 'em, put 'em in a baking dish with a little wine or broth and plenty of butter. Cover with waxed paper and bake 25 min. Eats like aspaagas.

3. Batter and fry the catfish. Treat the fish very simply.
Sautee the leeks, but not so much that they lose all their texture.

Sounds good so far, I know. Just wait.

You have some spices, I hope. Mix up a quick paste of some cumin, garlic, and hot chilis (cayenne is fine, but if you have some SE Asian chili paste, that's best). How much of each spice to use? Taste as you go, my friend, taste as you go. Trust your palate. But make sure you make enough paste, as this is the basis for your sauce.

Toss the paste in a pan with about a tablespoon of hot oil for, say, 20 seconds. Quickly add some water and just a splash of vinegar (rice vinegar is best, but white will do). Add enough water to make the sauce the texture you want.

Place the sauteed leeks on a plate all pretty-like. Put the catfish on top. Pour the sauce over.
