Curried beef vegetable medley
1/2 cup lentils 1 lb ground beef 2 potatoes, sliced 2 carrots, sliced 1 celery stalk, sliced 1 Anaheim pepper, sliced 1 onion, chopped 1 6 oz. can tomato paste 1 15 oz can diced tomatoes 1 cup rice 2 Tbsp curry powder 1 tsp cumin 2 tsp turmeric 1/2 tsp garam masala 1 tsp salt 1 tsp pepper 4 almonds 4 cloves t tsp shelled sunflower seeds
Boil the lentils in 1 cup water, then simmer until tender. Brown ground beef in a large skillet. When brown, add vegetables, curry powder, cumin, 1 tsp turmeric, garam masala, salt and pepper. Add lentils (do not drain) and 2 cups water. Boil. Add tomatoes and tomato paste, stirring to make a gravy. Cook over medium high hjeat until thickened, about 30 minutes.
Bring 2 cups of water to a boil in a separate saucepan. Add 1 tsp turmeric, cloves, almonds, and sunflower seeds, then rice. Bring to a boil again, then simmer until water is absorbed.
