Why is cooked broccoli so much better than raw?
I love steamed broccoli and could eat it every day.

Raw broccoli? Not so much.

i like it crisp. I find blanching veggies works out better. slightly cooked, but have that great fresh crisp bite :9

just taking a little break. I'd been spending a lot of time in GD on serious topics, and I found myself getting frustrated and angry. I thought it best to back away a bit and regroup.

Somehow even blanching raw broccoli makes the taste brighten up considerably. I eat broccoli raw but prefer it cooked, especially with a squeeze of lemon juice or tossed in a little bit of wine vinegar.

I was prompted to ask the question while eating my lunch: an enormous salad of spring mix greens, shredded carrot, pea pods, raw broccoli florets, and a few slivered almonds. It was good, but it got me thinking about how much better broccoli is when it's cooked.

but that's like saying being shot dead is better than being hanged drawn and quartered.

It's all nasty stuff, and should be put straight into the composting bin in favour of some yummy vegetables.

How about some roasted asparagus? Very, VERY yummy. (A little olive oil, a little salt and pepper, pop it in the oven for 10 minutes...mmmmm!)

I normally blanche asparagus though - very very quickly, then put some blue cheese (Danish blue especially) on as soon as it's out of the water.

It's the same with cauliflower - really don't like that either.

Just about all other vegetables can be eaten by the bucket-load.

andrew weil wrote a piece abt how the cancer-fighting molecules in the cruciforms are not well released in a form you can digest unless you cook these vegetables

enjoy yr steamed broccoli and eschew the horrible 70s/80s fad of raw broccoli nibblers

Raw broccoli is too bitter and I can't stand the texture. Steam it for a little bit and it's a wonderful. Is broccoli your favorite vegetable? Mine is steamed artichokes...so good.
