pork roLLed with stuffing, cranberries, and ..... ?
my idea for dinner tonight is pork roLLed with stuffing, cranberries, and i'm thinking oranges.

my questions to the foodies are:

- what kind of stuffing shouLd i use? if i had pLanned this dinner out, i wouLd have made homemade stuffing a day earLy.

- what cut of the magicaL animaL shouLd i use? we're gonna try to fiLLet it ourseLves.

- and does this sound appetizing, or am i going too overboard on this concoction?

1. I would do a cornbread stuffing with pecans...
and I would also steam asparagus...

Just butterfly it, spread the stuffing, and roll. You'll have to tie with cooking twine.

It tastes great and it's in season, so it's cheap. Also the green would be visually pleasing with the cranberries.

5. sounds yummy!
make sure you have some nice aromatics in the stuffing, like chopped onions and celery,
and instead of oranges, I would just use the zest for flavor. cooked oranges tend to get mushy, but you'll get great flavor from the zest. that should go really well with the cranberries.

on the zest.

my thinking with using oranges - the 2 fruits wouLd cook and make a sorta-paste inside the pork.

any idea on the stuffing? either a brand or a substitute on kind of short notice?

7. Pine nuts, sweet onions, cranberries, and thin apple slices, plus
some cooked wild brown rice. Saute them all together in a big skillet with some unsalted butter until the onions caramelize, then pulse it in the food processor a few times to create a lovely roll-up stuffing. And I think the best cut to use would be a nice, juicy pork tenderloin.

24. Oooo, you don't like cooked apples? Hmmm.
An alternative--add a couple of teaspoons of apple juice concentrate to your cranberry mixture. All of the taste, none of the mushy texture.

23. Frozen cranberries should be fine
Most frozen fruits and veggies are flash-frozen at the peak of ripeness, so they have about the same taste and nutritional value as fresh, so long as they're within date. You should get at least one apple anyway, though--I'd recommend something crisp and juicy, but not too tart, because you want it to help cut the tartness of the cranberries a bit. I recommend a Rome Beauty or a Gala for this purpose--both crisp and sweet, and good for cooking.

25. I had pork rolled around a bread crumb stuffing with
cranberries and apricots. It was very good. I've also had rolled pork stuffed with prunes. It too was good.

26. How about roasting the asparagus INSIDE the pork?
You could go two ways:

Roasted pork and asparagus brushed with a lemon-soy-sesame oil-minced garlic mixture, served with the rice.

Roasted pork and asparagus brushed with a balsamic vinaigrette, with a sprig of fresh Italian herb tucked inside (rosemary, thyme, etc.) You could serve this with polenta, or quinoa.
