Starting tomorrow, I have company coming on 2 separate occasions in the next week. Thurs-Sat, and Mon-Weds. My house is cluttered! Typical midterms slack period...I need to get motivated to start tonight...maybe I'll cook dinner first though. Yeah, that's the ticket.

I've been swamped with homework, papers, etc for two weeks...with no sign of letting up. I need my relaxation time! x(

5. what's for dinner?

yesterday I made a killer spaghetti sauce, but I didn't eat it until today. Today I made both meatballs and breaded eggplant, and then had a little of everything. (Of course I *IQF'd * a bunch of little meatballs and eggplant and about half of the sauce.)

Tonight is kinda lame/simple...Pasta tossed with hamburger and vegetables (garlic, onion, peppers) sauteed in olive oil. Topped with Parmesan.

I didn't make any IQF meals, just did the separate freezing.

I'm thinking I may try a moussaka inspired pasta dish later in the week... I have some ground lamb, and now I have the eggplant.

My son loves to come home and take a bag out of the freezer and empty it into a skillet and have dinner 10 minutes later. And when I make it myself I know what goes into it.
