Hummus
Holy fuck. It may just be because I've switched the diet up and have been eating more vegetables and so on, but I never realized how freaking good hummus is. It's like I haven't lived before I dipped a carrot in hummus. WTF?

6. Not curd. Pureed garbanzo beans-usually-sometimes white beans.
Bean cured is generally soy. Hummus is not soy.

32. Bill, it's easy to make, modify, and it freezes well in small containers
Cheaper to make and freeze than buy prepared.

Good hot weather food, something that fits your location.

I use it for Havocdad's lunch cooler when he has to be out in the field on hot days. Not so risky as mayo and meat sandwiches and perfect with a whole wheat cracker and some fruit. He gets a nourishing, satisfying lunch and I don't worry about the little ice chest not being cold enough to keep him from dying from mayo poisoning ;)

Try it as a wrap sandwich: Spread on tortilla, add a big handful of fresh spinach leaves and some chopped tomatoes or cukes, roll and nosh. You'll thank me.

It makes for a great sandwich too, if you use a really thick hummus and lots of fresh veg on good bread.

You can get all the ingredients (even tahini) in your local mega-mart.

33. Bill has a little Middle Eastern market not far from his location; hope he knows about it.
He can get all the tahini his little heart can stand. And some damned good olives.

My brother loves olives, so I went to that little market and got him some of every kind they had. Made for a really fun birthday present! If ever your travels take you to Tucson, give me a heads up and I will give you some fun places to check out.

21. I love the stuff.
Cukes and thin wedges of red onion are good for dipping into hummus too. Hummus is also good as the base of a healthful vegetarian sandwich -- use it as a spread on whole grain bread. Add sliced tomatoes, cukes, and lettuce.

Try baba ganoush for a change. It's the eggplant spread of the Middle East.

23. Also try baba ghanoush
Eggplant dip. I roast my eggplants whole on the grill until the skin is charred, let it cool off, and then peel the skin, dump the meat in the food processor with some garlic, lemon juice and tahini sauce...puree and voila! Good stuff to dip!

Carrots in my house are an endangered species when hummus and baba ghanoush are around!

25. Hummus and tomato on Ezekiel bread, lightly toasted.
Don't say I didn't warn you.

Also, if you run across California Patties, I think they are called, try them with a spread of hummus instead of condiments. The patties are veggie patties, soft rather than hard like the Gardenburger style, and veggie not wheat/soy based like Boca and many other veggie burgers. They are rather bland and a little sweet to use as a burger with ketchup and cheese, but the flavor of the hummus is perfect for them. Hummus, patty, Ezekiel bread, and tomatoes. Sprouts if you got 'em.

38. California Burgers!!!
They also come in Tex-Mex :) I could get them at Trader Joe's in LA, and my dad sometimes finds them at Costco in Michigan. I love those things, even though they're a bit pricey. I didn't put hommous on them very often, but I did eat loads of them on Ezekiel bread, often topped with Avocado. I do eat beef, but I'd usually rather have a California Burger - I can't even eat garden burgers anymore, now that I know how good a veggie burger can be.

30. I've started making my own!
All you need it canned chickpeas and some spices and some tahini (which took me a while to find, it was in the salad dressing isle) and some lemon juice to keep it from changing colors! All of that blended then scooped with pita chips, mmmmmmm :loveya:

34. Fie on your canned chickpeas! I buy cases of dried chickpeas, cook up 3 lbs at a time
and freeze the hummus in small containers to be used at my leisure! It works like a charm and is much cheaper that way. If you have freezer space, or are cooking for a big party, it is really a great way to go.

I have turned my small eastern Montana community onto the joy of hummus.

I'll write this down and look for dried chickpeas. Since I can't drive I have to work with whatever my Giant sells but my neighborhood is so mixed up with people from everywhere, I've found almost everything there. .. well except vegan cheese, which I'm gonna ask them to get.

36. I live in a TINY town with one grocery store. They bring in a case of the dried beans
and I buy the case. Twelve one pound packages. It works for us. Ask your market if they will do that. Maybe you have a neighbor or friend who would go in with you to buy the case.

37. oh, yeah, it's awesome
It's one of the few things that I buy every single week at the grocery store. If I had a blender, I'd make my own. I make it when I stay with my girlfriend, and we go through loads of the stuff. You can dip things in it, put it on sandwiches, have it as a sauce/side dish to other things. It's brilliant stuff.
