what are you having for dinner tonight?
I'm going to make a salad of romaine, carrots, celery, cucumber, walnuts, dried cranberries, and cubed seasoned chicken bosoms. Mrs. V. will have Ranch on her salad; I'll have balsamic vinaigrette.

I'm glad to be employed & glad to live where I can get nourishing food. I'm grateful.

What are you having for dinner?

1. Don't hate me
It's in the 70's outside. I'm going to barbecue a marinated tri-tip. The dh and I will split a baked potato, and I got some asparagus at the farmers' market yesterday.

10. Tri-tip here.........
Stove-top grilled (40 degrees out). Broccolli. Artichokes. Cheesy mashed potatoes. Thin mints for dessert.

39. Have You Ever Cooked Asparagus On Your Grill?
It's delicious. I brush it with olive oil and sprinkle with an herb and garlic seasoning.

Veggies cooked on the grill are so good! I cook anything that won't fall through the grill top. I cook on charcoal only (sometimes with some wood chips for flavor), not on a gas grill, but I can't see any reason why a gas grill wouldn't enhance the flavor, too.

Green or yellow squash is wonderful with bar-be-que sauce. Don't brush on the sauce until the veggie is almost done, though, so it won't burn.

I bake potatoes on my grill. They pick up a smoky flavor from the charcoal and they are really good. I use indirect heat (charcoal pushed to the sides of my Weber kettle) for potatoes and they cook evenly. Also, wrap them in foil, but don't pierce them. Potato skins are porous and the 'taters won't explode if you leave them intact. In fact the 'tater will be much moister if you don't pierce the skin.

I love cooking on the grill. I'll be so glad when warm weather is here to stay.

5. Shrimp scampi
light baby greens salad, loaf of French bread and a light mer lot.Large beautiful fresh shrimp we picked up at Port Canaveral today. We eat more fish than meat, very lucky to have access to fresh fish, shrimp and oysters all the time. Also husband and son and grandson are avid fishermen. Last week they caught 6 pompano, we all share!
Dessert strawberry shortcake, this is our season in FL. and they are large and luscious.

I like it!

I'm making rice penne covered by a sauce made of sauteed tomatoes, onions, garlic, spinach and red beans-- sprinkled with grated Pecorino Romano. Very virtuous-- to make up for all the junk I ate and drank yesterday.

11. Rice penne
is pasta made from rice instead of wheat--comes in all shapes-- my huz is allergic to wheat so we buy it in Whole Foods.

For the dish, you saute a bunch of chopped garlic and onions in olive oil, then when they're pretty much cooked add the tomatoes and saute. Then add a drained can of any kind of beans-- red, black, kidney, pinto, then a package of frozen spinach that you've pre-cooked and drained of water. Add some salt, pepper, basil, parley, oregano to taste while it's cooking. You might also add some olives and a dash of balsamic vinegar. Serve over pasta, with grated cheese on top. Yummy and nutritious!

but i am in the process of making carnitas. yum! the pork is cooking in the oven as i speak. when it's done, just add some fresh tortillas, cheese, pico de gallo, sour cream and avocados, make a burrito, soft taco, or tostada, and you're good to go :-)

(the garlic smells terrific!)

garlic red smashed potatoes (skins on)and onion gravy,steamed broccoli with raspberry vinagrette, tossed garden salad with homemade dressing. Lemon sorbet for dessert with a mint Girl Scout cookie on the side. A Yellow Tail merlot for those so inclined..a couple glasses of Fat Bastard for me.

Why does stuff like that always taste better after a night in the fridge?

Some authentic recipes list five or six kinds of meat in this one dish; I guess cholesterol levels in the Philippines are deadly.

I will substitute vegetarian chorizo, but I will use fish sauce and dried shrimps, as I do eat fish.

35. Rice congee with chicken and vegetables
I got the recipe from the New York Times and modified it to suit (I leave out the slab bacon -- shudder!). I put celery, red peppers and frozen peas in it, along with the ginger and garlic, and topped it with salt, green onion slices, and sesame oil. It's easy, cheap, and tasty (and great to eat when you have a cold or migraine). The only drawback is, if you make your own stock, it takes a *minimum* of three hours to make!
