Joseph Heller and his ten year struggle to produce "Something Happened."

William Gass's "The Tunnel" (12 to 20 years, I think)

Many of Cormac McCarthy's novels, from "Blood Meridian" forward (particularly that tense 8 or so year wait for "All The Pretty Horses").

I'll add others if I think of them.
