what are you making for easter dinner/brunch

have a shitload of people coming.
making a brunch,
scrambled eggs with green yellow zucchini, tomatoes, green peppers.
bacon
crescent rolls with sausages and cream cheese
boca vege sausage
blueberries and blackberries
bunny cake (yes I made a huge bunny surrounded by peeps in green coconut grass)
fried potatoes and onions
OJ
coffee
and, of course, easter baskets for grandson. lots of peeps, hes too little for jellybeans.

1. I do breakfast and dinner

For breakfast I'll have sausage, coffee cake, hot cross buns, hash browns, grapefruit, and eggs for those who want them.

Dinner is ham with a dijon/brown sugar glaze, pineapple rings, and cherries, au gratin potatoes made with Black Diamond cheddar, fresh asparagus with lemon butter, green beans for my father who hates asparagus, a turkey breast for my brother and sister in law who don't like ham, crescent rolls, and a fairy torte made by my sister for dessert.

Easter baskets for all filled with lots of candy except for my niece who is only seven months old. She gets a basket, but no candy.

squash casserole

homemade strawberry and Italian cream cakes.

Those are the things I know about. I am sure we will have lots more. We glutton on holidays.

16. We're having honey baked ham too

I love honey baked ham...it's what I look forward to on Easter and Christmas. We'll also be having kielbasa, pierogis, green bean casserole, yams, egg bread, and scalloped potatoes.

5. aw, I just saw bunny cakes in the store!

My parents used to get a big coconut covered lamb cake and we'd have lamb and mint jelly, more Catholic, or something, I suppose...


We usually go out to dinner that day now. And my son refuses to eat peeps!

6. Eggs Benedict with asparagus

It's a long-time family Easter brunch tradition. Poached eggs and bacon on English muffins, topped with steamed asparagus and hollandaise sauce.

I'm still not sure about dinner. I might make ham for the carnivores and salmon for the semi-vegetarians, or see if I can talk everyone into salmon this year for a change.
Scalloped potatoes, corn niblets, more asparagus, dinner rolls, and Sunshine cake for dessert.

Sunshine cake

1 box yellow or lemon cake mix
11 oz can mandarin orange slices in juice
4 eggs
1/2 cup vegetable oil

Preheat over to 350. Grease and lightly flour two 8-inch cake pans, or a 13 by 9 cake pan, or a bundt cake pan. I use the bundt pan for this.

Beat eggs, add oil and cake mix Add mandarins and their liquid, then beat on medium speed for 2 minutes. Pour into pan(s)and bake about 25-30 minutes, more for a bundt cake.

Allow to cool. When completely cooled, frost with:

20-oz can crushed pineapple (drained)
8 oz container of Cool Whip.
3.5 oz box instant vanilla pudding.
Mix on low speed for 2 minutes.
Frost cake and refrigerate for 2 hours or overnight.

For Easter I put an inverted paper cup in the center of the bundt cake, frost over the top of it, then sprinkle coconut flakes (tinted green with food coloring) atop the cake to simulate Easter basket grass. Then scatter some jellybeans over everything and add a small chocolate bunny. My daughters loved this when they were kids.

7. We're going to a friend's house to celebrate Spring

It's a potluck, so I think we're bringing asparagus wrapped in smoked salmon. Someone is making cheesy potatoes. There will be a ham (which I will not eat). All in all, there will be much feasting and groaning.

Three or four couples from the 'hood will be coming and everybody will bring some kind of dish.

15. Our family gathering is at our oldest son's home this year.

He and my Dil will be having ham & kielbasa and we'll all be bringing various casseroles and desserts.

I hope it warms up a little bit so we can have the usual easter egg hunt.

17. Leaving for my dad's after worship, so I'll get there around 3 or 4.

Then we're going somewhere he's chosen. I don't know where. So, I don't know what I'm having. But I didn't eat ham on Easter even when I ate meat. The whole tradition rubs me the wrong way. I'll be something plant-based.

18. I am traveling to my parents house on friday for Easter sunday

Easter morning we are having eggs benedict.Then I am hopping the train and will hopefully be home in time for Easter dinner.My Grandparents are having a ham.
