10. I've been making this great Asparagus recipe from my Cooking Light cookbook
Need 1-2lbs of Asparagus.

Pre-heat oven to 400 degrees.

Take a cookie sheet or 2 (depending on how much Asparagus, I usually do 1lb at a time) and spray it with Olive Oil Pam (or other store brand). Spread the Asparagus evenly across the cookie sheet and then give an extra spray of the PAM on top and season with Salt & Pepper.

Cook Asparagus for 12-14 minutes (longer if the Asparagus is thick).

In a small sauce pan melt 2tablespoons of butter (I use that 50/50 butter blend from Smart Choice). You should melt the butter until it's reduced to a brown liquid, lightly stirring the solution for even melting. Turn off heat and then add 1tsp of Balsamic Vinegar and 2tsp of Light Soy Sauce. Warning this will bubble big time. Season with Salt & Pepper.

Drizzle the Brown Butter Vinegar reduction over the Asparagus and serve.

11. Try this one it is good as well.
Asparagus, cherry tomatoes, black olives, garlic sliced, and olive oil. I don't know what the quantities should be but I just use what I have. Coat the veggies with olive oil and add salt and pepper, give the tomatoes a poke so they don't explode and bake at 400 for about 20 minutes or so.
