1. It also provides a fair amount of beta carotene.
Even green bells have a fairly high amount of vitamin C.
Raw peppers -- they're good snacks.

2. my doc tells me that I will absorb iron better if I take it w/ vitamin C
green peppers have a very high vitamin C content.... 200% of the RDA for one cup

and they're great dipped in hummus

5. Thank you! I have an extra bell pepper that I couldn't think what to do with,
and it's not going to be good much past today. And I have a tub of garlic lovers' hummus...
