Yams.

I worked all day today, and came home to that as my Christmas Dinner. It was just me and my wife tonight.

It was her first time roasting a duck, and my first time carving one. She hit one out of the park, I hit a bunt single.

We plan to make Roast Duck our traditional Christmas Dinner from now on. Hot damn that was yummy! My favorite part was the wild mushroom gravy. And I plan on learning how to carve a duck.

I've never had duck in any form. I'm glad you two had a great time today...We were off to our family's home up the coast and we ate like kings!

Beef brisket, roast ham, mashed potatoes like yours, peas and tossed green salad w/walnuts and apples...

Ya have to try duck sometime. It's wonderful when prepared right.

I love brisket. I worked for this Master Chief in the Navy when I was a kid, and sat next to him on a flight home from some place I can't remember, but I remember how nervous I was, being a kid next to such an accomplished man. We talked, and I asked him what he was going to do when we got home. He said, and I'll NEVER forget this... "Son, I'm gonna barbeque a brisket bigger than a shitcan lid, and thicker than a family bible."

6. I haven't had duck for a very long time. I think I gave them up as

they always seemed too greasy. Maybe they just needed to be roasted more.
I guess the only thing worse than getting up and going to work, is not getting up, not going to work, and having no money.
But Big Bear Lake ought to be worth the trouble of it, no?
For me, I like to visit the snow, but not live with it.
I think the photo of Peggy may have been by the truck driver, Jonas or Jonas S, and was on the pier in Hermosa or Manhattan.
Anyway, now you have me thinking about those cornish game hens.

I'm glad it worked for your wife so that you will want to eat it again!!!

had she messed up, you might have thought "Oh, duck sucks, I'm never trying this again".

And I don't know what it is about duck, but after trying to carve many of them - and being able to perfectly fine to carve chicken, turkey, even cornish hens - I have yet to carve a duck in a way that goes beyond functional ("Hey, it's off the bone - what do you want?")
