What is the difference between "barbecue" and "true southern barbecue," and more

where can you get authentic (or even fake) southern barbecue if you don't live in the south?

My visit to Atlanta GA was a mind changing experience, but I still live in the South West and don't know where to get Southern Barbecue. In fact, I'm not even sure what Southern Barbecue was, other than some kind of carefully barbecued meat on bread with special sauce. Usually served with chips of some kind.

I'm not obsessed with it or anything, but would like to relive that experience as an adult and see why it is held in such high regard.

Any suggestions?

1. I think the major difference is that the deep south pork is more popular.
Also a dry rub over using a bbq sauce.

In the world of North Carolina barbecue, the battle of East vs. West is paramount. We decided to see for ourselves by visiting the pillars of eastern- and western-style barbecue: Ayden's Skylight Inn and Lexington Barbecue in Lexington. The Skylight is an exemplar of the vinegary eastern style, while Lexington is the mecca of the tomato-laced western style (people usually say "Lexington style"). Here's how they measure up.

3. Barbecue in Texas is beef brisket..
Usually wet mopped with sauce while on the grill. Sausage is also popular in Texas, but not near as much as brisket. True Southern Barbecue is pulled pork, often with a dry rub of spices.
