27. oh yum, I used to put cottage cheese on the waffle, too, until any form of dairy became my mortal
enemy :(

I don't like a pure carbo load - I like a little protein or fruit with waffles or pancakes.

7. Grits
They are better when made with half milk - half water, but you can make them without the milk and just use all water or half vegetable stock.

Make a big batch, refrigerate the leftovers in a loaf pan, slice and pan fry the next morning and serve with a little maple syrup.

12. Fish and Vodka stew (with extra vodka)
Not exactly easy unless it was made in the past few days at which point you just reheat it.

I love this stuff so I'll share it with all of you

You'll need:
1 pound fish fillets (I find Alaskan Cod works well)
2 tbsp lemon juice
2 tbsp vodka (I always use more )
Chives
4 onions, peeled
1 leek
2 carrots
4 or 5 Medium Potatoes
3 slices of bacon (I no longer use the bacon replacing it with some veggi oil. The preservatives in bacon mess with my migraines)
4 cups beef broth or meat stock
pinch of Saffron
1/2 tsp Basil
1 bay leaf
some salt and pepper to taste
You can also add some parsley as garnish - I only did that part if I was entertaining guests.

Drain the fish and cut into 1 in pieces. Put them in a deep dish then add the lemon and vodka. Cover it.
Finely chop the chives and onions
Cut the leek in half and then into pieces (I always make sure the leek is washed - they tend to have dirt and grit on them)
Peel and Dice the carrots and potatoes
Dice bacon and add to pot, cooking until it is transparent (just heat up the oil in pot)
Add the onions and chives - cook 3 min then let mix steam.
Add the leek, carrots and potatoes and steam for about 1 minute.
Add the Beef Broth and stir in the Saffron, basil and bay leaf.
Cover and let cook for 15 min.
Add the fish with the juice from bowl - simmer slowly for five minutes. (This is where I always add some more vodka - to taste)
Season with Salt and Pepper. Add the garnish before serving.
I always got 4 or 5 bowls out of this, but I also like bigger bowls.

29. huh. My husband would love this. He doesn't like 'traditional' breakfast foods
and looooved almost everything he ate when he lived in Finland and Russia. Mixing fish with vodka will make him a happy man.

Will have to nix the beef broth, though.. substitute with veggie broth OK, I assume?

I love it. I can't find it in my town any more sadly. I like it with a pat of butter. Since I can't get Bob's, my next favorite is cold leftover pizza. It's the breakfast of champions.

30. our local Big Lots has been having a huge clearance of Bob's Red Mill products; we have their
muesli and their 8 grain cereal and steel cut oats... I love it, too - mix in some fruit and a little honey and we're good to go.

Just looking for some alternatives to the hot cereal choice!

It's a bit of a drive to the nearest Big Lots, but I think I may have to make the trip to see if that's the case here, too. It's not horribly far a way, but I just don't like driving. But, for Bob's 8-Grain on clearance, I'll just have to suck it up and go.

It depends when I get up.

It is around 10 am I will just have lunch or dinner as I think of it.

In the country lunch was callled dinner and it was the big meal of the day.

Supper was small, usually a sandwich.

39. Almost every morning
I have about a bowl of diced up grilled zucchini (leftover from the night before, I'm not firing up the grill at 7am), a couple large spoons of black beans dumped on top, and three eggs stirred into it. Microwave, stir, microwave, stir, microwave, stir until the eggs are perfect. Top with hot sauce.

It's a slow carb thing - the eggs fill you up now, the beans digest slow and keep you full til lunch, and veggies are just healthy. I don't get a sugar carb mid morning crash with this. When my squash is gone (I'm being optimistic here in hoping it will eventually be gone), I'll switch to steamed swiss chard in the scramble.

Off topic but I am feeling smug because although my eggs aren't fancy free range or anything, I did ride my bicycle 25 miles round trip yesterday to get to the cheap store where eggs are still $1/dozen, and I got 6 dozen back home on the bike without smashing any of them.

(as long as eggs are OK).

I cook up a bunch of them and throw them in the fridge or freezer then just microwave them for a minute to heat them up, add berries and whipped cream (guess you can use non-dairy topping), job done.

It is boiled in water, no milk is involved.

My wife likes the fake meat products from Morningstar Farms; fake bacon and sausage links. They taste pretty good.

Almond Milk
Makes about 5 cups
Prep Time: 5 minutes
Ingredients:
•1 cup raw almonds
•4 cups water
•1 T. maple syrup
•1 t. lemon juice
•1/2 t. salt
Preparation:
1. Combine all ingredients in a blender. Pour mixture into a fine mesh bag or cheesecloth over a container, squeezing all of the liquid into the bag. Serve chilled as is or use in dairy-free recipes.

6 large potatoes, peeled and cubed
1 teaspoon salt
