Tips for earth-sensitive -- and tasty -- barbecuing
For those not subscribing to the Daily Grist, and who are thinking of barbecuing things other than reprobate Republicans, liars and deceivers, don't miss these earth-sensitive tips.

Here's a not-so-tasty mouthful: 2-Amino-3,4-dimethylimidazo<4,5-f>quinoline (or MeIQ). It is a possible human carcinogen that may be contained in cooked meat, according to the International Agency for Research on Cancer. But of much more immediate concern is the threat from bacteria, such as E. coli, salmonella, and campylobacter, found in undercooked ground beef and poultry. Listeria in deli meats, such as hot dogs, is a particular concern for pregnant women, since it can cause miscarriage.

Of course, you can avoid exposure to most of these pathogens by grilling up skewers of veggies instead (though vegetables can be contaminated by manure -- yuck! -- so be sure to wash them thoroughly).

Quinoline carcinogens can be produced in veggies as well as in meats. And in large quantities, too.

And MeIQ is a possible carcinogen -- aflatoxin is a proven, strong carcinogen, and its source is vegetables (legumes, specifically).

Bacteria can also thrive in vegetables, especially fruits.

If you're a vegetarian, your philosophy can get the best of you. Hygienic food practices are for all cuisines, and should be skimped on by no one. Unpleasant chemicals exist in all kinds of foodstuffs and if you care about your health, you should be aware of as much of the issue as possible, even if it doesn't fit in with your philosophy of eating.

Incidentally, prion illnesses are not partial to cows. They exist in plants as well as animals. None of us are immune. Care of the biosphere is an issue for everyone, and all dietary philosophies are subordinate to that.
