Rosemary and mushroom chicken
It was simple yet elegant and I had it for lunch every day...

I took a couple of pounds of chicken breast strips, rolled them around in flour, and gently grilled them in the grilling pan...then added rosemary, garlic, dried mushrooms, chicken broth and a bunch of white wine and about a half teaspoon of truffle mushroom oil. Let that simmer for about 25 minutes..the flour made a light gravy and I served it on whole wheat spaghetti.

It was kick-butt good. So good I am making another batch this weekend.

OTOH, the rest of the family didn't get it....

Sounds absolutely delish to me. I might have been more than tempted to throw in some capers but I love capers and am always more than eager to use them. Hmmmm...I'm think'n piccata!

2. Ooooh capers, that is a thought!
I'll have to scrounge up some.

I bought a second package of chicken, and thinking maybe orange ginger chicken over a bed of mixed wild rices and diced spinach.

About the family -- if it isn't white rice, (fried) meat, iceberg lettuce salad, creamed or starch veggies, I see leftovers that might not get eaten. On the flip side, more delicious brown bag lunches for me!!!

I'll bet they'll get it then.

It sounds wonderful either way. You can't go wrong with chicken, mushrooms, wine, rosemary, and truffle oil.

Kids just don't have well developed palates. I love things now that I used to palm and stuff into toilet paper in my undies for later burial under the shrubbery.

5. My mother hated to cook
and it showed in the final result. I was a smart, creative kid with good survival instincts.
