I hadn't made this in a while so I decided to make it tonight. I usually use Italian sweet sausage, but I didn't feel like going to the store so I made it with meatballs instead. You need
Spray a pyrex baking dish with Pam. Boil, drain, and rinse your Rigatoni and put one layer in the bottom of the pyrex baking dish
Cut meatballs in half and put half of them on top of the Rigatoni. Run 7 or 8 garlic cloves through a garlic press and add them. A little butter is optional.
Grate about half of the Parmesan and add it too
Put the first large can of diced tomatoes on
Put the remaining Rigatoni, the meatballs, and the rest of the Parmesan cheese.
Put the other large can of diced tomatoes on top and squish everything down real good.
Make a salad to go with it
Put 5 or 6 garlic cloves through a garlic press again and saute them over low heat with some butter.
Tin foil a cookie sheet, cut your bread open, and spread the garlic butter mixture on top. I only do one side in case somebody wants plain bread instead of garlic bread.
Bake your Rigatoni about an hour on 350. Some outside pieces will be a little crispy. Let it set about 10 or 15 minutes after you take it out of the oven.
Put the garlic bread in while the Rigatoni is setting.
