Wild Blackberry Breakfast
I'm determined to get out there and freeze every blackberry within 50 miles. What I don't freeze, I'll turn into something like this:

YUM! Good and easy.




Blackberry Breakfast Bars

2 cups fresh or frozen blackberries
2 tablespoons sugar
2 tablespoons water
1 tablespoon lemon juice
1/2 teaspoon ground cinnamon
1 cup all purpose flour
1 cup quick cooking rolled oats
2/3 cup packed brown sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon baking soda
1/2 cup butter, melted

For filling, in a medium saucepan combine berries, sugar, water, lemon juice
and 1/2 teaspoon cinnamon. Bring to a boil. Reduce heat. Simmer, uncovered, for
about 8 minutes or till slightly thickened, stirring frequently. Remove from
heat. In a mixing bowl stir together flour, oats, brown sugar, 1/4 teaspoon
cinnamon, and baking soda. Stir in melted butter till thoroughly combined. Set
aside 1 cup of the oat mixture for topping. Press remaining oat mixture into an
ungreased 9 x 9 x 2 inch pan. Bake in a 350 degrees oven for 20 to 25 minutes.
Carefully spread filling on top of baked crust. Sprinkle with reserved oat
mixture. Lightly press oat mixture into filling. Bake in a 350F oven for 20 to
25 minutes more or till topping is set. Cool in pan on a wire rack. Cut into
bars.
Makes 18 bars

1. good for you!
we've been enjoying blackberries from the store this summer. next time i see them on sale i'm trying your recipe with little tweaks for hubby. i can almost taste it warm from the oven.

usually i just toss some in cereal but this looks too good to resist!

3. I did some tweaking too
I used a tablespoon of sugar and some cornstarch for the blackberries. I used maybe 1/2 cup brown sugar. I used half wheat flour and half all purpose, and I used the old-fashioned whole oats. I also used 1/4 cup butter and 1/4 cup canola. It's still really good.

5. My wife's grandmother's cobbler recipe from East Texas
Melt 1 stick of butter in 8x8 pan
In a bowl mix 1 cup flour, 1 cup milk, 1 cup sugar and 1 teaspoon baking powder
Pour the batter into the baking pan
Add 2 cups blackberries
Bake in 350° oven for 20 minutes or until top turns golden brown.
Serve with ice cream.

6. Yummy!
I have a blackberry bush in my yard and collect and freeze the berries. They might be too mushy for this recipe, but I can save it for next year.

I make a variation of those and switch out fillings for the husband's lunch cookie. :hi:
