I'm going to be a a bit late to the crepe party

The boys are going backpacking and I'll have the casa to myself for a couple of days... So I'll make crepes then. :)

1. Well, I went ahead an did mine.

I used ginny's recipe for the whole wheat crepes and filled them with asparagus, caramelized onion, and sliced baby bellas.





Topped them with a mixture of crumbled amish blue, feta, the yogurt sour cream, and fresh cream. I had preheated the oven to 350 but turned it up to 400 and we went outside to watch for a bright pass of the ISS while they baked. Baked for a total of 20 minutes.

The usual fuzzy pic of the results. LOL



They were delicious and Bill loved them.

Whatcha gonna do with your days by yourself? Sounds like a good time to make some cheese, too. :hug:

4. T wants to help with the cheese, but I've put it off so many times!
We might get it done today though, it's rainy here and I think they are going to wait a day before they head out.

Your crepes look wonderful! I especially like the texture of the crepe. Looks light, but like it has some body to it too. Yummy!

I was in a hurry and trying to get them done so Bill could eat. LOL He was hungry when he got home and we didn't get to eat until after 8. Next time I plan on making the sauce instead of throwing the ingredients on top and hoping it would make itself. :rofl:

8. Love it! LOL
I did use my lightweight skillet so I could just pick it up and swirl the batter around and that worked well for the shape. I just think they were a little too thick, but not terribly.

I was thinking some chopped pecans would have been good in that recipe, too. Next time! :9

9. Hmmmmm....I was thinking of doing my belated challenge and pecans would be good
in a savory mix.

Crap...I just remembered that Bill took my camera backpacking...So no crepes for me today after all. If I am gonna be late to the crepe party I'm not comming without pics. :rofl:
