4. It's in the fridge
It rose and partially fell just they way it says it would in the recipe.

I will bake some tonight! :D

5. Yay! I've never baked it the same day I made it, but it's delicious bread so it
should rock. I'm very excited for you. Not hard at all, is it?

I like it best after two days, the flavor gets better and better as it goes through the cold fermentation in the fridge. I baked one that had gone almost the full two weeks and it tasted like a great cheese bread. Weird! :)

6. Neither me nor my husband would be able to wait
I will try one loaf tonight. We are going out of town for this last part of my Spring Break, so we'll see how much better it is on Sunday.

You are right, it was way too easy, the hardest part was trying to find room in the fridge for the big bowl.

7. Yup. I used my huge stainless bowl until I realized that we would make it regularly
Bill picked up an oblong rubbermaid style tub at the grocery store for me, and I finally got a bit of my refrigerator space back.

I always bake my Ain5 covered now and brush with a small bit of melted butter as it cools. Perfect bread every time.

8. I found an old enamel bowl that a 9" plate fits on top of
It's narrower than a regular bowl so it saves space.

19. That sounds perfect.
I was happy using my big stainless bowl, but I was always needing it for other things. I only have one really BIG bowl. Part of what I love about this process is that its not expensive, and you don't need any complicated gear to make great bread. :)

9. speaking of kittehs--
one of our cats just loves ABin5 bread. She jumps up on the breakfast table and begs until we give her little bits of it to eat. Why, do you suppose?

10. OH WOW WAS IT GOOD!
It baked just like it was supposed to. I was not prepared for how sticky it was, so I really didn't know if I was shaping it and slashing it correctly. I will know how to prepare my hands better in the future - for a time there was more dough on my hands than on the board, LOL!

Mr. AAL was amazed at how easy and delicious it was. The three of us finished off the small loaf very easily.

I will try to get pictures next time - neither Mr. AAL or AALette were going to wait for me to take one even if I had a camera handy. :D

This recipe is a keeper!

13. "sticky"
I have found it to be somewhat easier to handle when the dough is really, really cold. You mixed and baked today, so it maybe wasn't as cold as your next loaf.

You mentioned slashing... I find slashing the wet dough a challenge. Just fer kix, I'm gonna try not slashing & see what happens!

14. You rebel!
I almost wonder what would happen if you puctured in a few places. It would probably achieve the same goal.

18. Hmmmm... I kinda like that idea, just fer fun!
In the video of spelt flour bread posted today showed that he did not slash it. The loaf invented its own crazy cracks... pretty cool.
