What's for dinner? ~ Friday April 17th Edition
Hiya folks!

Hope everyone is well...I've had a rough few days but feeling a bit better. A friend brought over a big pan of lasagne, so I expect that will be tonights dinner, with fresh bread and maybe a salad.

What's for dinner where you are?

1. I made some crockpot faux lasagna last night for the SO
He'll be having that again this evening with a salad...I'll be having a salad with some poached chicken and some roasted butternut squash.

3. Very simple tonight.

We're both kinda wiped out from the week so we stretched out together for a little nap and didn't get up for about an hour.

It was just a nice fluffy omelet with fresh cream beaten into the eggs, caramelized asparagus, and ooey-gooey fontina cheese melted inside. All this mango talk got to me so I diced a fresh juicy mango as a side, and we had wheat toast with butter and native OK sand plum jelly.

Oh, and I got to talk to Tab on the phone for a bit before I started dinner. He's still complaining about that damn colander. I guess that means he's come to terms with his funnel. LOL

I sure hope you are on the upside of whatever's had you down this week. :hug:

4. fish
At the healthy grocery today they featured wild caught local dover sole filets. So I bought enough for a fish fry for the fam. We're having cabbage slaw with rice wine vinegar and EVOO dressing, corn muffins, a bowl of leftover tabbouli, the last of the easter eggs, deviled, and fried fish (dipped in egg, flour, cornmeal, Old Bay, and celery salt) with fresh dill tartar sauce. And I made a butterscotch cream pie for dessert (testing the filling).

It's going to be a lovely weekend weather-wise here. So I felt like cooking tonight!

Later I'm going to test a fresh strawberry chiffon cake, if I still have enough pep.

7. I just really love
a nice fried fish and I've not had any sole in a very long time. Your whole dinner (and desserts!) sounds wonderful.

You will share that strawberry chiffon cake recipe if it's up to snuff, right? :7

Oh, and did you see my note on that wheatberry salad? I really want to make it this weekend but I want to see how they suggest cooking the wheatberries before I do. Thanx! :hi:

6. Unnamed soup thought up as I woke from a nap.
Serves two.

1 small onion chopped
2 garlic cloves chopped.
oil for saute
1/2 cup tomato sauce, or more if you like, Tomato paste will work too.
appox 1 cup Beef Broth
Cilantro
cumin
black pepper
ceyanne pepper
Tsp cornmeal
2 eggs beaten

Saute onions, garlic, and spices until onion become transparent. Add tomato sauce and broth. sprinkle in the cornmeal. Let cook until the broth starts thickening. Turn off heat. Beat two eggs and add to broth. Be sure to stir vigorously to prevent eggs from clumping. Stir until the egg whites are no longer transparent. Garnish with cilantro and/or hot sauce.

Looks nasty, but tastes great.

8. Even though it was 70 degrees - we had chili
Mr. AAL had to go to the armory for Nat. Guard duty, so AALette always chooses chili when he's gone because he doesn't like it.

So we ate chili.

It was still good, even though all of our window were open! :D

22. Pace's Cowboy chile I made a day or so ago.
The only variation was that I used Omaha Steak blackened tenderloin tips for the meat. Good stuff! Chile in a jiffy

Texas Cowboy Chili

From: Campbell's Kitchen
Prep: 5 minutes
Cook: 35 minutes
Serves: 4

Ingredients:
1 pound beef sirloin steak OR boneless beef top round steak, cut into strips
1 tablespoon olive oil
1 medium onion, chopped
1 small green pepper, chopped
1 teaspoon ground cumin
1 tablespoon all-purpose flour
1 cup Pace® Chunky Salsa
1 3/4 cups Swanson® Beef Broth
Assorted Toppers *
Directions:

Cut the beef strips crosswise into small cubes.

Heat the oil in a nonstick 4-quart saucepot. Add the beef and cook until it's well browned and the juices evaporate, stirring often.

Add the onion, pepper and cumin and cook until the vegetables are tender-crisp. Stir in the flour and cook for 1 minute.

Add the salsa and broth. Heat to a boil. Reduce heat to low. Cook for 20 minutes or until it's done. Serve with Assorted Toppers.

Swanson Kitchen Tip: This recipe is also great using Swanson® Lower Sodium or Certified Organic Beef Broth in place of the regular beef broth.

*Assorted Toppers: Shredded Cheddar cheese, chopped green onions and Pace® Chunky Salsa.
