Honey Glazed Lemon Roast Chicken

Dinner was really delicious tonight. Served this with roasted potatoes and turnips, carmelized Brussels sprouts, and rolls made from Ain5 dough.

I would definitely make this again and maybe add a few other herbs and spices. :9

Even tho the recipe called for a much larger chicken, I used one that was just under 4 lbs. and adjusted the amount of lemon juice and cooking time accordingly. It would probably make 3-4 meals for one person at that size.

9. I made this again tonight

with mashed potatoes, steamed asparagus, and white corn on the cob. This time I also ground some dried rosemary and mixed it into the honey used for basting and it was fabulous! :9

This is a keeper recipe for sure!
